Baked Chicken Wings

There’s something about the smell of baked chicken wings wafting through the kitchen that brings me back to family game nights. My mother would always whip up a batch of her famous chicken wings, served fresh from the oven with a sweet and tangy ketchup-based sauce. We’d gather around the television, sticky fingers and all, watching the hockey or football game and savoring every bite. These wings are my homage to those treasured moments—crispy, flavorful, and easy to make.

Ingredients

For the chicken wings:

  • 2 lbs chicken wings split into flats and drums
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp baking powder for extra crispiness
  • 2 tbsp cornstarch for extra crispiness
  • For the ketchup-based sauce:

For the wing sauce:

  • 1/2 cup ketchup
  • 2 tbsp soy sauce
  • 2 tbsp honey
  • 1 tbsp apple cider vinegar
  • 1 tsp Worcestershire sauce
  • 1/2 tsp garlic powder
  • 1/4 tsp cayenne pepper optional, for a little heat

Instructions

  • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or aluminum foil and place a wire rack on top.
  • Prep the wings. Pat the chicken wings dry with paper towels. In a large bowl, toss them with olive oil, garlic powder, onion powder, smoked paprika, salt, black pepper, cornstarch, and baking powder until evenly coated.
  • Arrange the wings in a single layer on the wire rack. put in fridge for 2 – 3 hours.
  • Bake the wings. Bake for 20 minutes, then flip them and bake for another 20 minutes or until golden brown and crispy.
  • Make the sauce. While the wings bake, combine ketchup, soy sauce, honey, apple cider vinegar, Worcestershire sauce, garlic powder, and cayenne pepper (if using) in a small saucepan. Cook over medium heat, stirring occasionally, until the sauce thickens slightly, about 5 minutes.
  • Toss the wings in sauce. Once the wings are done, transfer them to a large bowl. Pour the sauce over the wings and toss until fully coated.
  • Serve and enjoy! Arrange the wings on a platter and serve immediately. Don’t forget the napkins!
